Chicken Artichoke Pesto Pizza

I have to give credit to my mother in law for tonight's recipe.  She made it for me once and I've been hooked ever since.  It's so simple I can't believe I never thought of this before.  You take a Boboli crust pizza layer it with pesto, chicken, artichokes and cover with fontina cheese.  Amazing flavor!  A gourmet homemade pizza that is sure to impress any one you have over for dinner :)

Chicken Artichoke Pesto Pizza (prep-15 min, cook-8-10 min)
1 large Boboli pizza crust
Jar of pesto sauce
1/2 cup chopped artichokes
1 package pre cooked chicken breast strips
2 cups fontina cheese

1. Preheat oven to 450 degrees.
2. Place Boboli pizza crust on a baking sheet or pizza pan.  Spread as much of pesto sauce as you desire on crust, layer chopped artichoke and chicken then cover in cheese.
3. Bake for 8-10 min and enjoy!

Cheesy Turkey Meatloaf and Mashed Potatoes


This evening I had the weirdest craving for turkey meatloaf.  I'm 7 months pregnant so I'm sure that's where it came from :).  I googled turkey meatloaf to see what recipes were available and came upon one that sounded easy and yummy.  Cheesy Turkey Meatloaf...the name alone sounds wonderful.  Pools of ooey gooey cheese in every slice of meatloaf! My fat cells said yes make this recipe now!  I work full time so coming home and putting this dinner together was really easy.  I made a side of mashed potatoes to go along with the dish.  Make sure you use cubed cheese instead of shredded to get the pools of cheese in every slice.  This meatloaf is very moist and flavorful.  It got my husband Scott's approval (he had 2.5 servings)!  Which in his language means I like it :)

Cheesy Turkey Meatloaf (prep time-15min, cook time-1hr)
1 lb ground turkey
1/2 cup milk
1/2 cup Italian seasoned bread crumbs
1 egg
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
2 dashes worcestershire sauce
1/8 tsp pepper
6 oz colby cheese, cut into 1/2 inch cubes
1/2 cup of your favorite tomato sauce

1. Preheat oven to 400 degrees.
2. Mix milk and bread crumbs and let it stand for 5 minutes.  Then add turkey, egg, and all seasonings and mix well.  Fold in cubes of cheese and place in loaf pan and cover with sauce.
3. Bake for 1 hour or internal temp of 180 degrees.
4. ENJOY!
